Healthy Quinoa Recipe!

Every single time we have a family party, my mom’s friend Pamela brings this amazing quinoa salad that I am literally obsessed with!  I finally took the initiative today to find out the recipe and make it for myself.  It is soo easy to make and definitely worth it :)  Here’s the recipe!

Ingredients (you can get all of these ingredients from Trader Joe’s!!)

  1. 2 cup quinoa (uncooked)
  2. 3/4 cup crumbled feta cheese
  3. 3/4 cup dried cranberry
  4. 1/2 cup chopped red onions
  5. Olive oil drizzle
  6. splash of lime juice (my preference)
Directions:
  1. Place the quinoa in a saucepan with 4 cups of water.  Bring to a boil.  Reduce to a simmer, cover and cook until all water is absorbed (10-15 minutes).  
  2. Place the cooked quinoa in a bowl to cool, then place in the refrigerator.
  3. Once chilled, mix all ingredients, and stir.
  4. Ready to serve!
I recommend this salad for a healthy lunch, or it could be a side at the dinner table!  Quinoa is rich in protein, antioxidants, and contains all nine necessary amino acid supplements that your body needs.  
Today I woke up early, went to hot yoga with Sara, had Banzai Bowl for breakfast, headed to my friend Sawyer’s house to watch a scary movie (I absolutely hate scary movies), then came home to make dinner with my mom.  I’m pretty tired but now I’m thinking about going bowling hehe.  Strikeeee
